From the Mermaid Kitchen - Poppy’s Recipe for Tarte au Citron



You guys are in for a real treat today.  This recipe comes from a New Release book called The Great Witches Baking Show, there may or may not be other recipes in the back of the book, you will have to read it for yourself to find out.  Seriously though, you guys are sure to love this book, especially if you are into watching cooking shows on The Food Network.  This is more of a cozy mystery then a true romance book, well so far anyway.  The next book will be coming out soon though with more humor and cooking between the pages.  I hope you guys take a chance and enjoy cooking this tart and maybe reading the book.  I really enjoyed the book, but the tart might be a little bit beyond my baking abilities.  I’m more of a bread baker.

Serves – 8 or a hungry 6

Ingredients:

Pastry
6 oz plain flour
4 oz cold butter, cut into small cubes
1 oz icing sugar
1 large egg, beaten
2 tbsp water



Lemon Filling
5 large eggs
4 fl oz double cream
8 oz caster (superfine) sugar
Finely grated zest and juice of 4 large lemons



Directions

1.  First up, rummage through your cupboards and find a 9-inch deep loose-bottomed tart tin

2.  To make the pastry, measure the flour, butter and sugar and add them all directly to a food processor.  (Don’t tell Mildred)  Whizz the mix until it begins to look like breadcrumbs.

3.  Slowly add the egg and water and then whizz it further until it forms a ball shape.

4.  Remove the dough and roll out using a flour-dusted rolling pin on a flour-dusted work surface until the pastry is just a little bigger than the size of the tin.  Line the tart tin with the pastry, and let the extra pastry hang over the sides of the tin.

5.  Chill your pastry tin in the fridge for 30 minutes.

6.  While the pastry is chilling, you can make a cup of tea and preheat the oven to 350F.  Line the tin with nonstick paper and fill with baking beans.

7.  Blind bake for 15 minutes in the preheated oven until the pastry turns a lovely pale golden brown.

8.  Take out of the oven and remove the baking beans and paper.  Carefully trim the excess pastry from the sides using a sharp knife.  Return the empty pastry shell to the oven for another 10-12 minutes or until it is completely dry.  Set aside to cool.

9.  Reduce the temperature of the oven to 325F.  Next measure all the ingredients to make the lemon filling in a bowl and whisk together until smooth.  Carefully pour the filling mixture into the cold baked pastry case.

10.  Transfer the tart and tray carefully to the oven and bake for 35 – 40 minutes or until just set but still with a slight wobble in the middle.  Don’t worry if it rises a little; the filling will sink down a bit when it has cooled.

11.  Leave to cool completely and then remove the tarte au citron from the tin and transfer to a serving plate.  Finish off with a generous flourish of dusted icing sugar and garnish with a few berries if you like.

What an enjoyable read. The author was really able to create a connection between the reader and the characters. The story does end in a conclusion for one mystery, but leaves us guessing and longing for the next book, about the answer to the mystery behind Poppy’s origins. I love how the characters really made a connection in such a short time and I can’t wait to see what happens in the next book. It really is like reality TV in a book and I’m on the edge of my seat waiting to see who gets voted off next. I can only hope the author doesn’t make us wait too long.
